This 40% cocoa sea salt milk chocolate egg comes with a 70g bag of 61% ‘silver ox’ dark milk broken chocolate. There is just the lightest splash of gold colour to brighten up the ‘crocodile’ chocolate shells, and the 61% broken dark milk chocolate has a shimmer of silver and for a chocolate so high in cocoa is incredibly mellow.

The pun on silver fox came about because last year was the Chinese year of the Ox and my husband James’ 60th birthday (1961). He has a ‘few’ grey hairs! We were experimenting with dark milk chocolate blends and this 61% worked really well; hard to believe it only has 10% milk.
