The 100% cocoa Grenada chocolate for this blend spent a couple of months in 2019 on the Atlantic on its way from the Grenada Chocolate Company to Den Helder and has since aged gracefully in our cellar before being blended with some 71% Grenada to make this mellow extra brut dark chocolate. I look on this as the manzanilla sherry of the chocolate world – bone dry but delicious. It brings out all the woody, leathery notes of Grenada’s trinitario cocoa varietals – the island has for many years focussed on fine and flavour cocoa, eschewing the quick buck of higher yielding cocoas. This shipment came with the Tres Hombres, a motor-less sail-only brigantine run by the Dutch company Fair Transport, that looks more like an extra from Pirates of the Caribbean than a cargo vessel. It’s not a cheap way of getting one’s chocolate but this is the only way to guarantee avoiding the dirty bunker fuels of container vessels or the high emissions and carbon footprint of airline freight, and the fleet of zero-emission ships slowly increases with every year.
